Eclectic Food: Slow-Cooker Chili

Slow-Cooker Chili


Ingredients:
2 pounds ground beef, browned and drained
1 large onion, diced
1 medium bell pepper, diced
3 garlic cloves, finely minced
1-15.5 ounce can dark kidney beans, drained and rinsed
1-14.5 ounce can diced tomatoes, drained
1-10 ounce can spicy Ro-Tel
1-6 ounce can tomato paste
1-14.5 ounce can beef broth
3 tsp chili powder
3 tsp cumin
2 tsp cayenne pepper
Salt and pepper, to taste

Directions:
1.  Combine all ingredients in slow-cooker.  Cook on low 8-10 hours.  Serve and enjoy!

Vegetarian and Vegan:
Replace ground beef with tofu, kidney beans, or black beans.  Substitute vegetable broth for beef broth.
