Eclectic Food: Sweet Potato Linguine

Sweet Poato Linguine



Ingredients:
1 large sweet potato
Fresh parsley
5-6 bay leaves
2 tablespoons butter
Salt
Pepper

Directions:
1.  Peel sweet potato.  Using vegetable peeler, slice sweet potato as thinly as possible lengthwise.
2.  Melt butter in a saucepan over medium heat.  Add parsley and bay leaves and cook until butter has browned.  Remove spices from pan and set aside.
3.  Add sweet potato slices to pan.  Cook, stirring occasionally, about 15-20 minutes, or to desired texture.
4.  Crumble parsley and bay leaves over pasta.  Season to taste with salt and pepper.  Serve and enjoy!
